How to Order a Quarter Beef

A quarter beef is the most popular starting point for families new to ranch-direct purchasing. Here is exactly how the ordering process works with Ellison Land & Cattle.

Step 1: Call or Text Kyle

The first step is a direct conversation. Call or text Kyle Ellison at 806-683-3110. He will confirm current availability, walk you through the options, and answer any questions. No web form, no automated system — just the rancher.

Step 2: Place Your Deposit

A deposit secures your spot on the processing schedule. Deposits are non-refundable but transferable to a future processing date if your circumstances change. Kyle will confirm the deposit amount when you speak.

Step 3: Complete Your Cut Sheet

Keeters Meat Company will provide a cut sheet — or Kyle can walk you through a standard one. Specify your preferences: steak thickness, roast size, ground beef packaging (1 lb or 2 lb), and any specialty cuts you want (bones, organ meats, etc.). First-time buyers often go with the standard defaults, which produce a well-balanced result.

Step 4: Pickup or Delivery

When your order is ready, you can pick it up directly at Keeters Meat Company in Tulia, TX, or arrange UPS Ground shipment. Kyle coordinates timing with you directly. Your beef arrives vacuum-sealed, labeled, and frozen.

Common Questions
How to Order a Quarter Beef
How much freezer space does a quarter beef need?
A quarter beef yields roughly 50–60 lbs of packaged meat and requires approximately 2–3 cubic feet of freezer space. A standard upright freezer compartment or a small chest freezer handles this easily.
How long does a quarter beef last a family?
For a family of four using beef 3–4 times per week, a quarter beef typically lasts 2–4 months. A half beef is a popular choice for families that want fewer reorder cycles.
Is there a minimum order size?
The quarter beef is the minimum bulk order size. Individual cut orders are also available — contact Kyle for current availability on individual cuts.
Can I add pork to my beef order?
Yes. Quarter and half hog options are available. Many families combine a quarter beef and a quarter hog for variety. Ask Kyle about combined order availability.
What is the difference between a front quarter and a hind quarter?
A front quarter and a hind quarter have different cut compositions. The hind quarter has more of the premium steaks (sirloin, round). The front quarter has more chuck roasts, brisket, and short ribs. A standard "split quarter" gives you a balanced mix from both ends.
