The largest single category by weight is typically ground beef, made from trim throughout the animal. From a half beef, expect 30–50 lbs of ground beef depending on how much trim you designate for grinding versus other uses. This is your everyday workhorse cut.
Steaks come from the middle section of the animal and include ribeyes, T-bones or porterhouses, New York strips, sirloin steaks, and flank steak. A half beef yields a limited number of each premium steak type — typically 6–10 of each, depending on how you fill out your cut sheet. These are the cuts with the highest per-pound value.
Roasts come primarily from the chuck (front) and round (rear). Chuck roasts, arm roasts, shoulder roasts, and rump roasts are the primary options. From a half beef, expect 15–25 lbs of roasts total depending on your cut sheet preferences.
Short ribs, back ribs, and brisket round out the order. A brisket from ranch-direct grass-fed beef is a highlight — typically 6–10 lbs from a half beef. Soup bones, stew meat, and organ meats are also available if requested on the cut sheet.
