Ranch-direct pork works similarly to bulk beef — you order a half hog or whole hog, place a deposit, fill out a cut sheet, and receive your order vacuum-sealed and frozen. Here is how it works with Ellison Land & Cattle.
A half hog yields approximately 70–90 lbs of packaged pork. A whole hog yields 140–180 lbs. The right choice depends on your family size, freezer space, and how much pork you consume. Many families combine a half hog order with a quarter or half beef order for a well-stocked freezer.
A half or whole hog includes pork chops, pork roasts, ribs (spare ribs and baby back), ground pork, ham, and bacon (if you request it — curing is a separate step). Specialty items like lard, head cheese, or sausage links can be requested on the cut sheet.
Like beef orders, pork orders require a deposit to secure a processing slot at Keeters Meat Company in Tulia, TX. Processing dates are scheduled in advance and spots are limited. Contact Kyle at 806-683-3110 to ask about current availability.
A half hog requires approximately 3–4 cubic feet of freezer space. Families ordering both a half beef and a half hog should plan for 7–9 cubic feet total — a 10 cubic foot chest freezer is a comfortable fit.
A half hog pairs well with a beef order to stock your freezer completely. Call Kyle to check availability.
